Arugula Salad with Sherry Vinaigrette and Candied Pecans

The idea to make this Arugula Salad with Sherry Vinaigrette and Candied Pecans comes from a salad I enjoyed at a local restaurant. Except that I changed a lot of the ingredients. The restaurant salad featured local mizuna and roasted summer squash–here we’re going with peppery arugula and carrot ribbons. What took me down this salad path was the candied pecans and the light slightly sweet sherry vinaigrette!

As with this particular switch-up,  the concept is transferable. Start with excellent fresh veggies. Dress with a simple vinaigrette made with good oil and an interesting vinegar, like sherry or white balsamic. Include some regular salad greens if you want to soften the stronger greens like arugula or mizuna. Finish with a generous sprinkle of candied nuts–walnuts, pecans, almonds–your choice.

Arugula Salad with Sherry Vinaigrette and Candied Pecans

Peppery arugula and salad greens balanced with a slightly sweet sherry vinaigrette dressing and candied pecans.

Ingredients
  • ½ cup pecan pieces
  • 2 tablespoons sugar
  • 2 tablespoons sherry wine vinegar
  • ½ teaspoon sea salt
  • ¼ teaspoon white pepper
  • 1 clove garlic , minced
  • 2 teaspoons honey
  • 6 tablespoons extra virgin olive oil
  • 1 or 2 carrot , peeled into strips
  • Arugula leaves , stems removed
  • mixed salad greens
Instructions
  1. In a heavy-bottomed skillet, over medium heat, stir the pecans and sugar until the nuts are toasted and the sugar melts into them. Set aside to cool. Break them apart into pieces.
  2. Make a vinaigrette dressing by whisking the vinegar, salt, pepper, garlic and honey together, then whisking the in the olive oil.
  3. Toss the greens with the carrot strips, candied pecans and the dressing. Arrange on plates.
