Monthly Musings –What’s Happening in Letty’s Kitchen!

Carlos the dog looking out the trailer door.

Hola from Baja Mexico!

Close your eyes. Pause for a moment. Think about the best thing that’s happened to you today. Say it out loud.

My best thing? This morning I took two Zoom classes, first was strength training and then an hour later, yoga.

Zoom! For me, the online live video communication app is the best thing that’s come out of this pandemic. Zoom has been around for longer than a year, yes, but I’ll venture to say that as people all over the world went into stay-at-home mode, Zoom became the elastic to hold us all together.

Connecting for school and business, with family and friends, exercise and cooking classes… we’re all Zooming.

  • Spanish In Cabo has a free Zoom workshop every week. Anyone with a goal of improving their Spanish, practicing what they know, refreshing vocabulary and having fun is welcome! If you’re interested, get on Malena’s email list. Spanish in Cabo’s new online program is SpanishUpToYou.
  • Pain Free Posture with Kyra is a mainstay for me and Robbie. With the pandemic, Kyra has been Zooming her classes and adding to her YouTube channel. Anyone can join on Tuesdays and Thursdays, 7:30 am MST.

Dear subscribers, A huge virtual hug to you. I hope you enjoy my recipe updates and monthly newsletters like this one.

I’ve been sporadic lately, but I’m back this month with an update of what’s happening in Letty’s Kitchen. (If you don’t already subscribe to my emails, sign up here.)

Robbie’s been encouraging me to make these newsletters more available, he says they’re the best part of my blog. Hmmm.

If nothing ever changed, there’d be no butterflies.

So… here we are, let’s do something different! Please let me know what you think.

Starting with this one, Letty’s Kitchen newsletters will go up as a blog post. When you remember a cooking idea or link that caught your eye, you’ll be able to find it later, whenever you want. Like a recipe post, I’ll just send subscribers an email to let you know when it’s up.

Letty on Los Barriles beach at sunset hour

Today’s newsletter comes to you direct from a dusty windy little beach town in Baja Mexico, our home for 5 months this winter. Los Barriles is on the east side of the peninsula so we see incredible sunrises every morning!

We’re less than 100 yards from the water—on windy days Robbie can kitesurf practically right out the trailer door. We’ve got a large shaded “patio” living room that works well for yoga and social distancing when friends stop by. It’s not camping, it’s glamping.

Yes, Covid is here. We mask-up and try to stay more than 6 feet apart from others. I’m going to the store less, and shopping earlier in the day. Living and socializing outdoors though, we definitely feel safer here than we might back in snowy Park City. We’re lucky to have the option.

What’s cooking?

The vegetable farmer here in Baja provides much of our dinner inspiration–I buy what he has that day and go from there. His just-picked organic greens are amazing.
