Fennel, Mint and Lemon Basil Salad
Simply refreshing, surprisingly delightful, light and lemon-y, this fennel, mint and lemon basil salad makes use of  three ingredients in this week’s Ranui Gardens CSA box. I’ve you have a perfectly ripe avocado on hand, add a couple of avocado slices to each plate.

Fennel, Mint and Lemon Basil Salad
Ingredients
  • 2 fennel bulbs
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon honey
  • 1/8 teaspoon Real Salt
  • 2 tablespoons finely chopped lemon basil
  • 2 tablespoons finely chopped mint leaves
  • 2 tablespoons finely chopped fennel fronds
Instructions
  1. Trim the fennel bulbs and slice them very thinly on a culinary mandolin.
  2. Mix the olive oil, lemon juice honey and salt until the honey is dissolved.
  3. Pour over the fennel and mix in. Stir in the chopped herbs.
  4. Cover and let the flavors meld for about 15 minutes before serving.
