Spicy Roasted Chickpea Snacks

These spicy roasted chickpea snacks fall into the bet-you-can’t-eat-just-one category. The chickpeas, aka garbanzo beans, are baked with a little olive oil and kosher salt until they’re crunchy on the outside and chewy on the inside. Easy.

Like I said, roasted chickpeas are easy to make. You roast in a hot oven for 30 minutes, shaking the pan to roll them around about every 10 minutes. When they take on a golden color and have a nice crunch, sprinkle generously with your choice of spices and roast another 5 minutes. For this recipe I used dukkah spice, the same as spice mix I use for potatoes dukkah.

    As for Real Salt, It is the best. I was at dinner in Vail last week with my co-workers and I looked at the salt on the table and declared it Real Salt… my co-workers laughed at me thinking I was crazy. I got the last laugh when the waiter identified the salt and gave a great description of it.
