Triple Berry Kale Smoothie

Smoothies to go. A quick whir in the blender will have you out the door lickety-split. No time for breakfast is no longer an excuse—not that we need an excuse to enjoy this triple berry kale smoothie. Healthful fast food is what I need it the morning!

Breakfast gets your metabolism going. Eating breakfast can help you lose weight. How? When you don’t eat breakfast, your body thinks it needs to conserve energy, and slows the number of calories you burn. Breakfast steadies your blood sugar–you’ll have more energy and you will be happier—all day.

For forever, I’ve been drinking my breakfast on the go. Smoothies way back in college–don’t let this gross you out—were essentially eggnog. We’re talking a blend of a raw egg, non-fat milk, sweet ’n low sugar substitute, and a splash of vanilla. Thank goodness that along the way my out-the-door drink evolved to include fruit and protein powder, and no egg!

This triple berry and kale smoothie convinces me that kale is delicious in blender breakfasts. Berries give the smoothie appealing mauve purple color, and offset the raw kale flavor (and color) that could be a turnoff for some. The pineapple and apple juice add sweet acidity.

They keep evolving, my smoothies. They’ve morphed from a basis of cow’s milk, to soymilk, almond milk, oat milk, and sometimes just plain water. Along with the liquid goes a banana, plant-based protein powder and ground chia seeds. (Affiliate links.) Frozen blueberries are pretty much the norm too. When pears are in season, I’ll add a pear half.  Not so much any more, but sometimes I’ll dollop in a spoonful of plain yogurt.

Kale is changing my smoothies again. With kale in the recipe, I recommend fruit juice and/or coconut water instead of any kind of milk. Use all coconut water if you wish to lessen the sugar jolt. (There are 9 grams of natural sugar in a cup of coconut water vs 24 grams in unfiltered apple juice.)

Triple berry and kale smoothie ingredient notes:

  • Unless you buy it pre-cut, you’ll need to peel and cut the pineapple. It’s nice to cut it ahead of time–then there’s pineapple chunks for snacking. I had pineapple leftover from Pineapple and Tempeh Kebabs. Canned pineapple chunks will do in a pinch.
  • If you buy kale washed and ready to eat like packaged baby kale, you are set. If it’s whole kale in a bunch or from your garden, prep the kale beforehand. Wash, strip and discard the stems, wrap in tea towels or paper towels and stuff into a plastic or ziplock bag—kale waiting and ready for whatever.
  • Sometimes I wash and strip the kale and tear it into small pieces. I lay it out on a tray and freeze the leaves. When it’s frozen, gently transfer to a freezer bag and store in the freezer
  • , It’s easy to keep apple juice and coconut water on hand. We buy chia seeds already ground online. (Affiliate link.)
  • Always keep a bag of frozen berries in the freezer. You’ll be ready to make berry muffins or berry crisp, or more smoothie flavors, like berry blue smoothie!

Drink your breakfast. Let your smoothies adapt with your mood and what’s in the fruit bowl, pantry and fridge.

    Your smoothie advice is wise. We agree on the coconut water and pineapple in our kale smoothies. It just seems to work. And we have been pre-hydrating our chia in a jar in the refrig, so it is ready for the morning smoothie. Try that if you run out of ground chia.
