Vegetarian Spring Brunch Recipes

In a grocery store the other day, I got side-tracked in the Easter aisle. Holy pastel marshmallow peeps! Weaving around those chocolate bunnies and colored egg-shaped sweets motivated me to assemble this collection of vegetarian spring brunch recipes.

It’s the first official week of spring and that deserves a celebration, right? Throw a party in the middle of the day—and share your bountiful table with family and friends.

Here’s a baker’s dozen recipes perfect for a brunchy get-together–eggs, muffins, scones, waffles, quiche, granola, torta, frittata and tart, and a refreshing fruit salad. You could make all 13 and spread out a lavish buffet, or make just one recipe from this list and call it good. (Many of these dishes can be made ahead.)

My goal, as always, is to inspire you to get in the kitchen and cook something delicious. Oh, and if you hop into the seasonal aisle this week, say hello to the candy Easter bunnies for me.

Vegetarian Spring Brunch Recipes:

  • This last week of Lent, bake traditional Hot Cross Buns. These particular ones sparkle with candied ginger. (You can make the dough on Saturday, and bake them on Sunday.)
  • My buttery flaky Rosemary Oatmeal Scones—you gotta try them. Gild the lily with a slather of Honey Lemon Curd.
  • These healthy dairy-free Blueberry Hemp Muffins stay moist for days.
  • How about a Spinach and Goat Cheese Upside-down Quiche to start off the day? With a whole wheat and olive oil crust, on top of wilted spinach, goat cheese dollops and rich savory custard.
  • Here’s an unusual baked Salad Greens Torta that’s great for brunch, as well as dinner.
  • Need a vegan protein dish for those who don’t want honey baked ham? 😉 They’ll be delighted with this Potato Hash with Kale and Tempeh. The photos show it with eggs—which are totally optional.

  • Mango and oranges and pineapple and crunchy sweet jicama, oh my. This refreshing fruit salad makes my mouth water just thinking about its agave-sweetened citrus dressing.

    • Tammy–brunch is also a great way to entertain if you invited someone who can’t drink alcohol. Less pressure on them. Unless of course you were planning on serving mimosas or bloody Marys. 😉 Reply · 24 March, 2016
