Carrot Ginger MIso Dressing

Grated carrot and a pinch of turmeric give this vinaigrette dressing its soft orange hue, rice vinegar and white miso bring pleasing tang, and fresh ginger adds a refreshing bite. Makes about 2 cups. Figure about 3 tablespoons per serving.

Ingredients

  • cup rice vinegar
  • 2 tablespoons water
  • 2 tablespoons apple juice
  • 1 cup grated carrot
  • 2 tablespoons minced shallot
  • 1 tablespoon grated fresh ginger
  • 2 tablespoons white miso (optional)
  • 1 tablespoon honey or agave syrup
  • ¼ teaspoon fine sea salt
  • ¼ teaspoon turmeric
  • Pinch cayenne pepper
  • ½ cup avocado oil

Instructions

  • Pour the vinegar, water and juice in a blender. Add the carrot, shallots, ginger, miso, honey, salt, turmeric and cayenne. Add the avocado oil and blend until smooth.

Notes

A high speed blender will give this dressing the smoothest texture.
