Grated carrot and a pinch of turmeric give this vinaigrette dressing its soft orange hue, rice vinegar and white miso bring pleasing tang, and fresh ginger adds a refreshing bite. Makes about 2 cups. Figure about 3 tablespoons per serving.
Pour the vinegar, water and juice in a blender. Add the carrot, shallots, ginger, miso, honey, salt, turmeric and cayenne. Add the avocado oil and blend until smooth.
Notes
A high speed blender will give this dressing the smoothest texture.
