Homemade Roasted Red Pepper Vinaigrette — copycat salad dressing

Homemade Roasted Red Pepper Vinaigrette is an easy copycat version of a bottled salad dressing, one you buy from the store. Smoky roasted-pepper flavor and just the right amount of honey sweetness shine in both, but this one’s better—because it’s homemade, with love.

The best thing about making your own vinaigrette is you know exactly what’s in it. It blows my mind to see sugar in almost every bottled dressing on the shelf–Arrrgh‼ Homemade salad dressings rock, especially over tossed lettuce and veggie salads.

Salad Greens Torta with Green Onion and Cheese {gluten-free}

Wondering what to do with those mixed greens that threaten to go bad before you can eat enough salad? The easiest way is to wilt them into this unusual torta. It’s kind of like a tart, but without the crust, kind of like a frittata but made with just one egg. With a crunchy pumpkin seed topping, this gluten free salad greens torta with green onion and cheese is brilliant!

When you’ve mixed all the ingredients for this healthy torta and you’re ready to spread it in the pan, you will say to yourself, too much lettuce–what on earth is holding it together? Have faith, go with it. Baked, the torta comes out of the oven behaving like a crustless pie!

Spiced Potato and Pea Samosa Patties

These spiced potato and pea samosa patties, a vibrant mix of potatoes and peas, fresh ginger, curry, and green chiles are simply the samosa filling naked—happily caught without its fried triangular-shaped pastry. If you are crazy about samosas, you’ll love these patties, a healthier spin on the popular East Indian street food!

Spiced Potato and Pea Samosa Patties

They’re easy. Simply mash boiled Yukon gold potatoes with sautéed onion and ginger, curry spices, and peas. Stir in lemon juice and cilantro, and shape into the patties. Pan-fry in coconut oil to a luxurious golden brown, and serve with cooling cumin basil yogurt and tangy-sweet fruit chutney.

Candied Ginger and Honey Hot Cross Buns

Imagine a batch of honey-sweetened whole wheat soft dinner rolls. They’re fragrant with warm spices like cinnamon and ginger and cardamom and loaded with candied ginger and dried fruit. Yep, these candied ginger honey hot cross buns.

Gingery Whole Wheat Hot Cross Buns baked in pan with cream cheese frosting cross on top

Make them healthier with whole wheat flour. Give them a cross made of flour and water before baking, or finish with a cream cheese and maple syrup cross once the buns have cooled. The flour and water cross is traditional and the frosting cross is my twist.
