What’s Happening in Letty’s Kitchen!

Hey, hello, hola!

I hope youโ€™re having an amazing spring! Here, weโ€™ve had frigid nights, interspersed with record-breaking warm days, followed by full on snowstorms–itโ€™s definitely spring in the mountains! Like they say, if you donโ€™t like the weather, just wait a day.

Let’s talk about stuff. Stuff in closets, in the office, the kitchen, the garage. After living in a trailer for 5 months, we realize how much stuff we truly donโ€™t need. So, back home now, weโ€™re in the process of parting ways with some of our stuff. Spring cleaning!

The message is out thereโ€”and I fully get itโ€”that cleaning things out will make you feel better, lighter, happier. Be more with less. To go from overwhelmed to overjoyed, declutter.

My goal is to get rid of 5 things a day. When I have the urge to keep something or can’t decide what to do with it, Iโ€™m asking myself these simple questions:

Do I use it? Do I love it? Do I need it?

On purpose, we left our Instant Pot in the trailer in Baja. As soon as we landed back in Utah, Robbie ordered a new Instant Pot (affiliate) for steel cut oatmeal. He eats it every day, with blueberries, banana, oat milk, yogurt, and coconut sugar. Email me if youโ€™d like to have his recipe.
